Chocolate Chip Cupcakes
We went to San Diego a couple weeks ago and while we were there we went to Heavenly Cupcake and Tom had a chocolate chip cupcake. It looked so good, I have been craving one ever since. I finally got around to making some at home. I had a little trouble tracking down a recipe. Found some for chocolate chip zucchini, chocolate chip carrot and others, but I finally found a recipe at Martha Stewart. Somehow that woman always comes through for me when I need a recipe. Now I have an even better reason to get her cupcake cookbook.
I usually have grand plans to do elaborate frosting that I make from scratch. I didn’t have those plans this time cause I was trying to make dinner at the same time I was making the cupcakes so I had already bitten off more than I could chew. I haven’t used a jar of duncan hines or betty crocker in years because I just don’t like the taste that much. I have found that the new icing at Trader Joe’s tastes great and since you add the butter it almost seems like it is from scratch. I keep a box in the cupboard for those days when I don’t feel like making my own.
Chocolate Chip Cupcakes

3 1/4 cup cake flour
1 1/2 Tablespoons baking powder
1/2 tsp salt
7 oz (or 14 Tablespoons) of unsalted butter, softened
1 3/4 cup sugar
1 cup plus 2 Tablespoons milk
1 Tablespoon pure vanilla extract
5 large egg whites, room temperature
2 cups semisweet chocolate chips
Preheat oven to 350 degrees
Whisk together dry ingredients in a large bowl
Cream butter and sugar until light and fluffy
mix together milk and vanilla. Add to the butter and sugar alternating with the dry ingredients until everything is mixed.
Beat egg whites to stiff peaks, and fold into batter. Fold in Chocolate chips.
Fill each about 2/3 full. Bake cupcakes about 22 minutes.
